  • Handful of heirloom tomatoes, diced 
  • 1 heaping tablespoon of cilantro, chopped 
  • Sea salt, to taste 

Directions 

Start by halving and pitting the avocados, then scoop the flesh into a bowl. Mash them to your preferred texture. Mince the Serrano and jalapeño peppers (you can remove the seeds if you want less heat). Combine the peppers with garlic, onions, tomatoes, and cilantro. Fold this vibrant mixture into the avocados. Sprinkle with sea salt, taste, and adjust as needed. Serve with tortilla chips or as a topping for tacos.  

Spiced fruit salad 

When you’re short on time but still crave something fresh and fun, Maleni’s family-favorite fruit salad is a game-changer. It’s sweet, tangy, and customizable, making it a summer must-have. 

Ingredients 

  • Watermelon, cubed 
  • Mango, chopped 
  • Pineapple, cut into chunks 
  • Cucumber, thinly sliced 
  • Tajín seasoning, to taste 
  • Lemon or lime juice, fresh-squeezed 
  • Optional toppings: Chamoy or Tapatío 

Directions 

Gather your favorite summer fruits and slice them into bite-sized pieces. Toss the fruit and cucumber together in a bowl. Sprinkle Tajín for a chili-lime kick, and drizzle freshly squeezed lemon or lime juice. For an extra burst of flavor, add a splash of Chamoy or Tapatío. The best part? 1. Potato salad 

  • Ingredients: Potatoes, mayonnaise, mustard, celery, onion, salt, pepper, and hard-boiled eggs (optional).

2. Pasta salad 

  • Ingredients: Cooked pasta (rotini or penne), cherry tomatoes, cucumbers, olives, Italian dressing, and shredded cheese. 
  • Directions: Cook pasta and let it cool. Toss with chopped vegetables, olives, and shredded cheese. Drizzle with Italian dressing and mix well. Chill before serving. 

3. Fruit salad 

  • Ingredients: Mixed fresh fruits (e.g., watermelon, strawberries, blueberries, pineapple, and grapes), honey, and lime juice. 
  • Directions: Chop fruits into bite-sized pieces. Drizzle with honey and lime juice. Toss gently and serve chilled. 

4. Strawberry shortcake 

  • Ingredients: Shortcake biscuits, fresh strawberries, sugar, and whipped cream. 
  • Directions: Slice strawberries and mix with sugar to create a strawberry syrup. Layer shortcake biscuits with strawberries and whipped cream. Serve immediately. 

5. Grilled veggies 

  • Ingredients: Zucchini, bell peppers, mushrooms, olive oil, salt, pepper, and garlic powder. 
  • Directions: Slice vegetables and toss with olive oil, salt, pepper, and garlic powder. Grill on medium heat until tender and slightly charred. 

6. Hamburgers 

  • Ingredients: Ground beef, salt, pepper, burger buns, and toppings (lettuce, tomato, cheese, etc.). 
  • Directions: Season ground beef with salt and pepper. Form into patties and grill until cooked to your desired doneness. Serve on buns with your favorite toppings. 

7. Cucumber salad 

  • Ingredients: Cucumbers, red onion, vinegar, sugar, salt, and dill. 
  • Directions: Slice cucumbers and onions thinly. Mix vinegar, sugar, and salt to create a dressing. Toss cucumbers and onions in the dressing. Garnish with dill and chill before serving. 

8. Macaroni salad 

  • Ingredients: Cooked macaroni, mayonnaise, mustard, diced celery, onion, and salt. 
  • Directions: Cook macaroni and let it cool. Mix with mayonnaise, mustard, diced celery, and onion. Season with salt. Chill before serving. 

9. BBQ ribs 

  • Ingredients: Pork ribs, BBQ sauce, salt, pepper, and garlic powder. 
  • Directions: Season ribs with salt, pepper, and garlic powder. Bake or grill on low heat until tender. Brush with BBQ sauce and cook for a few more minutes until caramelized. 

10. Deviled eggs 

  • Ingredients: Hard-boiled eggs, mayonnaise, mustard, salt, pepper, and paprika. 
  • Directions: Slice hard-boiled eggs in half and remove yolks. Mix yolks with mayonnaise, mustard, salt, and pepper. Spoon or pipe the mixture back into the egg whites. Sprinkle with paprika.
